I wouldn't worry about fuel economy. Since its a V6 you have more than enough injectors to spread the fuel over so you wont need overly large injectors (bad economy) as compared to a 4 cylinder. If you are getting a tunable ecu you can really lean out the low and no load cells so you are safely using almost no fuel when you are cruising and at idle. That helps the most. Anything up to 264 duration cams will also cause you no trouble with fuel which are pretty big as it is.
