One sensor I'm concerned is missing is the ambient sensor that is suppose to be near the radiator. Is it located between the bumper and the front of the radiator or is it between the rear of the radiator and the engine block.?

Since you're tearing apart the entire interior for the swap, you might be able to get past most of the wiring issues. The car with the automatic climate control is already wired for it. You could just pull the entire dash(or cabin) wiring harness and swap it in completely with a lot less trouble than rewiring your car's current harness to run the climate control unit. Now, you will still need the sunlight sensor, the mode control motor, and both the temp sensors(the ambient temp sensor at the radiator; (sorry but I'm not sure where it's exactly located) and the coolant temp sensor at the heater core). Everything else should be plug and play from what I can tell.
I'm also unsure where the cabin wiring harness plugs into the main engine wring harness. You may have to find this info on the online service manual or through searching on this forum.
