A couple of things:
1) Removing the cap does not remove air pressure since there shouldn't be any air in the system to begin with. Also, the system should have no pressure on it when cold. Pressure only develops as the coolant gets hot and expands.
2) No reason to even consider changing the thermostat unless you're having overheating problems, the car never warms up or the housing gasket leaks.
