Need Some Advice

Alright guys I need your expert and experienced advice.
I am in Toronto and I have a 1992 Coupe for which I'm about to do a head gasket job followed by the rack & pinion. I love the car and its a keeper. Here's the thing; I have another 1990 Coupe as well which I was parked for a while following an accident and then repaired poorly by a crappy mechanic while I was away for school. Now that I have the G2, I don't mind getting rid of the G1. However, the amount of money that I've put into it is nowhere near what I'll get for it and it almost seems like a waste to sell it. At the same time, I can't afford to maintain and run two cars; specially two legends. So I was thinking of parting it out but my question is, what if I take off a few parts and then nothing else gets sold and I'm stuck with a car missing some parts that cant even be sold but junked.
I know a lot of you have gone through such scenarios and figured your suggestions would really help.

dont try to compete with the scrap yards and part it out unless you have a lot of sales on the major components made with non-refundable deposits AND a lot of time (lots of time) AND the space and tools to carry out the work ....it will be a lot of work !

There are not may G1s left in Toronto. I hardly see any. My wife had a great one and I actually tried to find one for myself, but gave up and got a G2.

I actually liked driving her G1 over my current G2.
Her G1 ended up with 2 rebuilt transmissions before she dumped it
